If you’re like me, there’s this glorious timeframe between Labor Day and Thanksgiving during which you’re testing out recipes for tailgates, gamewatches, and backyard barbecues (and yes, there’s a difference between a cookout and a barbecue).
This is my favorite dish to serve with burgers and hot dogs alike. It’s fresh, it doesn’t get sketchy out in the sun (I’m eyeing those mayo dishes), and it’s relatively guilt-free.

Avocado and Corn Salad
3-4 cups corn kernels (grilled or steamed, and cooled)
2 pints cherry tomatoes, halved
2-3 avocados, chopped
1 large onion, diced
3-4 T cilantro, chopped finely
2 T lime juice
2 T olive oil
1 tsp lime zest (optional)
Salt and pepper to taste
Combine all ingredients in large bowl, and toss lightly. Chill until ready to serve.
